Vato, all-day tortillería and neighborhood restaurant, opens in Park Slope

Vato, an all-day tortillería, bakery, and restaurant from the team behind Michelin-starred Corima, opened Thursday at 226 Seventh Avenue. in Park Slope.

The concept was created by lifelong friends and collaborators Chef Fidel Caballero, Sofía Ostos, Paco Alonso, and Erica Alonso. The name, a Chicano slang term meaning “homie,” reflects the closeness and shared heritage that shaped the project. Caballero draws inspiration from his upbringing on the U.S.–Mexico border and his time cooking in Spain, while the team collectively leads the restaurant’s creative direction.

Vato’s daytime menu centers on Chihuahuan-style burritos, including Burnt Ends Egg & Cheese with hickory-mesquite smoked brisket, Pollo en Mole with free-range chicken braised in mole negro, and Verde, featuring braised pork shoulder in salsa verde. Housemade flour tortillas are sold by the dozen, and other offerings include Mexican-influenced pastries by Corima pastry chef Erick Rocha, toasted bolillo sandwiches, and single-origin Oaxacan coffee.

Evening service, launching in mid-December, will expand into a full-service dinner restaurant and wine bar. Highlights from the Basque-inspired, modern Mexican menu include Tuna Crudo with bluefin tuna and Gordal olives, Tortilla de Bacalao, Spanish-style cod omelette, and Donostiarra-style Mollete de Txangurro. Drinks will feature natural wines curated by Corima wine director Mariano Garay, vermouths and amaros from Spain and Mexico, and cocktails by Bar Director Edward Hardebeck.

The 30-seat space includes an open kitchen, a bar, a dining room, and a backyard patio. Minimalist wood-and-concrete design elements reflect the partners’ Northern Mexican heritage, while large windows flood the interior with natural light. Walls are adorned with street photography by Paco Alonso, showcasing scenes from Ciudad Juárez and El Paso.

Vato is open Thursday through Monday from 7 a.m. to 3 p.m., with dinner service starting in mid-December from 5 p.m. to 10 p.m. The restaurant operates on a walk-in-only basis.
